Paleo30 Day 2

·

Day 2 went a little more according to plan than Day 1.

Breakfast was a banana and some water because I totally forgot that Jude went back to school and we were rushing around first thing. However, I did manage to make my Paleo Pumpkin Muffins later that morning. So I guess you could say it was my 2nd breakfast.

For lunch I had a baked sweet potato with a little leftover curry chicken.

And for dinner we had bean-less paleo chili topped with avocado. I could seriously put avocado on pretty much anything.

bean-less paleo chiliDay 2 was pretty low-key and uneventful, just the way I like it.

    Healthy Almond Pumpkin Muffins

They are melt-in-your-mouth moist and have a touch of sweetness. These muffins are perfect for breakfast or a snack as they aren’t overly sweet. Ingredients and Substituions ALMOND…
