Paleo30 Day 2

·

Day 2 went a little more according to plan than Day 1.

Breakfast was a banana and some water because I totally forgot that Jude went back to school and we were rushing around first thing. However, I did manage to make my Paleo Pumpkin Muffins later that morning. So I guess you could say it was my 2nd breakfast.

For lunch I had a baked sweet potato with a little leftover curry chicken.

And for dinner we had bean-less paleo chili topped with avocado. I could seriously put avocado on pretty much anything.

Another fairly normal day for the Lieb family. Jude went to preschool, Joe went to work and I stayed home with the littles all day. I have always enjoyed cooking but have recently found it a challenge with 3 little kids but I’m learning that like everything else I do with 3 littles it just…
