Whole30 – Day 23

Yesterday was a busy day for us but I also managed to pack in some very yummy food.

Breakfast: Scrambled Eggs with Roasted Red Pepper and Ham

Lunch: Banana Pancakes & Bacon

Banana PancakesI am really excited about this meal, a breakfast that isn’t eggs (well there are eggs in the pancakes) but is paleo! Joe is going to be thrilled. I will post the recipe soon.

In the afternoon I took all 3 boys to the YMCA. Jude started Rookie Sports at the Y, where he is learning how to play soccer, basketball and baseball. He absolutely loved it. I put the littles in the gym nursery and got in a little workout. We didn’t get home until kind of late but luckily I had dinner ready in the slow cooker.

Dinner: Paleo Bean-less Chili topped with Avocado

ChiliThis time the chili was not nearly as hot since we didn’t add the chipotle chilies.

In the evening we made some sweet potato coins and topped them with avocado, they are probably my new favorite treat!

So far I’ve lost 10lbs during our Whole30 challenge, most of it since I started going to the gym again. My goal for this year to is lose all of my pregnancy weight so far I’ve lost all of my  Simon weight and I’m 1lb from my Noah weight. Basically I just need to lose 12 lbs to be at my pre-Jude weight!

  • Whole30 Day 4

Grocery shopping happened yesterday so our cupboards and refrigerator are full of paleo-friendly foods. I bought a rotisserie chicken at the grocery store and we ate 3 meals from one chicken. I highly advise buying a rotisserie chicken because it’s quick protein that tastes great. I also bought a whole chicken, already cut up, that…

  • Whole30 – Day 5

Joe really misses chips and tortillas. We eat a lot of Mexican influenced Paleo foods, mostly because our family LOVES avocados and guacamole. We’ve eaten about 6 avocados this week! (maybe more) Day 5 was no exception, lots of avocados and guacamole flowing in the Lieb house. Noah has been walking around the house chanting,…
