Roasted Asparagus with Lemon
If you want a quick and easy side dish for chicken, steak, fish or even a flavorful topping for a salad give this roasted asparagus with lemon a try. I love plain roasted asparagus but adding a bit of lemon juice and few thinly sliced pieces of lemon take this dish to a new level.
This is a simple dish to prepare and only requires a few ingredients and a single sheet pan making it easy to clean up.
How to Select & Prepare Asparagus
Make sure you select brightly colored asparagus that is firm and not limp.
Thinner stalks mean they are younger and less woody
To trim asparagus hold one stalk between your forefinger and thumb in each hand and gently bend the stalk, it should easily snap in the ideal trimmed area. Discard the bottom overly woody portion of the asparagus and place the trimmed tops on a parchment lined baking sheet. Continue with each individual piece of asparagus.
Ingredients
- 1lb trimmed asparagus
- 2tbs olive oil
- 1 lemon, thinly sliced
- 2tbs freshly squeezed lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions
- Preheat your oven to 400 degrees F and line a rimmed baking sheet with parchment paper
- Add asparagus to the baking sheet and drizzle with olive oil.
- Add lemon juice
- Sprinkle with salt and pepper
- Top asparagus with lemon slices
- Bake for 8-10 minutes
