Whole30 Day 1 & Day 2

My site host was acting up yesterday so I didn’t get to blog about our 1st day of this Whole30 Challenge.

I’ll be honest we are easing into this Whole30 because I’m just not feeling it but I know I need to do it.

Day 1
Breakfast – 2 Scrambled eggs, bacon and a small piece of watermelon
Lunch – Tuna atop a spinach salad with a side of pepperoni
Dinner – Chicken fajitas (no tortilla or cheese)
Snack – I blew it out of the water that evening because my friends Andrea and Melissa had their book launch party at Sola and their food is just too amazing. I mean seriously, hot mini donuts!

Day 2
BreakfastPaleo Morning Glory Muffin
Lunch – Turkey, Pepperoni, Cucumber, Carrots, Tomatoes, Almonds, Peach
DinnerSpaghetti Squash Bolognese
Snack – Smoothie (I used Whole Cow Milk because I haven’t gone to the store yet to buy Almond Milk)

So I guess I’m doing pretty well with my meals it’s just my sweet tooth for snacks is getting me.

Despite the complicated looking recipe, the Morning Glory Muffins were pretty easy to make but also kind of bland. Joe and I have been thinking of ways to add more flavor without adding non-Paleo ingredients. I’m thinking of adding more cinnamon and maybe some pineapple.

The Spaghetti Squash Bolognese was a big hit. I’ve never cooked a spaghetti squash and it was pretty easy. Joe requested we add it to the regular Paleo list of foods we eat. Win!

Exercise
I haven’t done any formal exercise yet however I did take all 3 kids to Target by myself. 2 kids in the cart (70+lbs total) + 1 kid strapped to me (25+lbs) for almost an hour, that’s a workout.

Does anyone have any good paleo snack recipes that will appease my sweet tooth?
