Whole30 – Week 2 Meal Plan
This week we are going to revisit some of last week‘s favorites and try a few new recipes that I’m hoping everyone will enjoy.
Monday – Day 7
Breakfast: Hard Boiled Eggs & Bacon
Lunch: Egg & Chicken Salad
Dinner: Beef Fajitas
Tuesday – Day 8
Breakfast: Spinach and Eggs
Lunch: Leftover Fajitas
Dinner: Zucchini Noodles and Meatballs
Wednesday – Day 9
Breakfast: Chorizo Eggs
Lunch: Cucumber & Goat Cheese Sandwiches, Fruit, Nuts
Dinner: Chicken Curry
Thursday – Day 10
Breakfast: Eggs and Bacon
Lunch: Leftovers or Peppers and Pepperoni
Dinner: Bean-less Chili
Friday – Day 11
Breakfast: Avocado Eggs
Lunch: Turkey, Cucumber, Fruit, Nuts, Avocado
Dinner: Bun-less Burgers with Sweet Potato Fries
Saturday – Day 12
Breakfast: Green Smoothies & Sweet Potato Hash
Lunch: Baked Sweet Potatoes with Leftover Chili
Dinner: Moussaka
Sunday – Day 13
Breakfast: Canadian Bacon & Eggs
Lunch: Leftovers
Dinner: Pork Loin

I added in more options for eating leftovers for lunch this week with intention of making extra for dinner. This not only saves on time but money. I hope I’ve allocated enough extra to provide sufficient leftovers. I do have a few back up options available if leftovers don’t work.
