Whole30 – Day 18

They said there would be snow and that the schools would be closed but when we woke up Friday morning we were all sorely disappointed. The little bit of frozen rain that covered the ground looks more like frost than anything you could play in. So we sent Jude to preschool and went about our day as usually. Luckily, it was very bright and sunny out even though it was bitterly cold.

Joe got to work from home on Friday and even though we didn’t see him much because he was in his office on conference calls most of the day it was still nice to have him home.

Breakfast: Scrambled Egg with Avocado, Banana with Almond ButterAvocado Egg & Banana

I was feeling extra hungry when I woke up so I had 2 scrambled eggs with avocado, a banana and some almond butter. I wasn’t in the mood for bacon even though I do love bacon.

Later in the morning my friend Kim came over with her little girl and the kids had a fun play date and ate lunch together.

Lunch: Baked Sweet Potato topped with Leftover Curry Chicken and Avocado

Dinner: I planned on making my Paleo Bean-less Chili but got a little side tracked with all the fun we were having during the day and forgot to put it in the slow cooker. Then around 4pm I decided to cook it on the stove top but realized I didn’t have any diced tomatoes. Joe jumped in and tried to improvise by using a can of whole tomatoes and a can of diced chipotle tomatoes. Dinner tasted good but was super spicy, so much so that I couldn’t finish it. Joe loved it and had 2 helpings. It was too hot for the boys so we made them an assortment plate of fruit, veggies and other goodies. They loved it.

Paleo Bean-less Chili

Snack: I was obviously still hungry after dinner, since I didn’t eat most of the chili. So Joe made some homemade white sweet potato chips. They were awesome. I keep forgetting to take a picture of them because I eat them too quickly. I finished off the night with a small bowl of frozen fruit, which is quickly becoming my favorite sweet treat.
