Slow Cooker Butter Chicken

Weeknight dinner doesn’t have to be boring and bland, add a punch of flavor with this simple slow cooker butter chicken recipe. This recipe is full of hearty vegetables, savory sauce, and a hint of sweetness.

This recipe can be easily made with just a few ingredients and still pack in a lot of flavors. However, it’s also easily adaptable to fit different tastes and dietary needs. You can probably find all of these ingredients at your local grocery store. Simply prepare your ingredients and toss them into your slow cooker and dinner will be ready at the end of the day.

Slow Cooker Butter Chicken

  • This slow cooker meal is excellent for busy weeknight dinners.
  • Serve over rice, top with cilantro, and add a wedge of lime, and a side of naan.

Ingredients and Substitutions

CHICKEN BREAST – Boneless, skinless chicken breasts are used in this recipe but you can easily substitute them for boneless chicken thighs.

POTATOES – Adding potatoes as a heartiness to the dish however you could substitute cauliflower for a healthier, lighter option.

PINEAPPLE – Pineapple adds a touch of sweetness to the dish, you can omit the pineapple if you prefer.

SAUCE – You can make your own sauce for butter chicken however, this is supposed to be a quick and easy dish so we’ve used a jarred sauce. Not all sauces provide the same amount of flavor so you could easily give the dish a flavor boost by adding Garam Masala and Curry Powder.

ADDITIONAL INGREDIENTS – Add peas, cauliflower, or sweet potatoes as alternative ingredients.

How to Store Leftover Butter Chicken

Butter chicken is great the next day after all of the flavors have had time to marinate.

  • Store leftover butter chicken in an airtight container in the refrigerator for up to 4 days. Store in the freezer for up to 3 months.
  • Let the frozen butter chicken thaw overnight in the refrigerator.
  • Reheat butter chicken in the microwave for 2 – 3 minutes or on the stovetop over low heat.

Ingredients

  • 2 lbs Chicken Breasts Cubed
  • 1 jar Jar Butter Chicken Sauce
  • 1 cup Pineapple diced
  • 1 yellow onion diced
  • 2 cups potatoes cut into large chunks

Instructions

  1. Place onions and potatoes in the bottom of the slow cooker, and add chicken.

  2. Top with pineapples and sauce, stir to mix

  3. Cook on low for 6 hours

  4. Serve over rice
