We eat lunch at home every day and sometimes PB&J or Turkey Sandwiches get a little old so I’m always trying new recipes that are quick and easy. I love grilled cheese but it always seems a little less than impressive so I tried to jazz it up and hence created the ABCT sandwich.
What is an ABCT sandwich? Only the most awesome sandwich to ever grace the planet.
A – Avocado
B – Bacon
C – Cheddar Cheese
T – Tomato

YUM!~
This is a great recipe to make with left over bacon, but let’s be honest when is there ever left over bacon? So go ahead and buy some extra bacon just so you can enjoy this yumminess.
Ingredients:
1 Avocado sliced
Cooked Bacon – 2 or 3 slices per sandwich
1 Slice of White Cheddar Cheese (or more if you like)
1 Tomato Sliced
2 Pieces of your favorite bread (mine is sourdough!)
Butter
Directions:
Cook the Bacon if you don’t have left over bacon. I cook mine in a pan until it is nice and crispy.
Butter each slice of bread
Layer ingredients – cheese, bacon, tomato and avocado, more cheese
Cook in toaster oven (on toast) until bread is browned and cheese if fully melted

Risotto sounds intimidating but it’s actually pretty easy to make, and totally delicious. The first time Joe attempted to make risotto he had the heat too low and it took about 4 hours to make, it tasted great but no one wants to stir rice for 4 hours. Finally he perfected his technique and it…
This is a recipe that kind of stumbled upon years ago. I adjusted it for the ingredients I had and then tweaked it over the years until until it’s become one of our favorite soup recipes. We are a pasta loving family but sometimes we need something different than cooked pasta with a sauce so…
Fresh summer tomatoes are my favorite. We get a weekly produce box and we almost always get tomatoes when they are in peak season. A few weeks ago I made a delicious tomato tart for Sunday lunch with a batch of golden tomatoes that were in our produce box. This recipe only required a few…

Peanut Butter S’mores Muddy Buddies! This stuff is addictive. As fall quickly approaches, I’m ready for all the comfort foods like s’mores. Cool evenings around the campfire roasting marshmallows and eating S’mores screams fall. Once a week, I try to add a special treat to my boys’ school lunches. Sometimes, I buy a special dessert…
We eat some form of Mexican food at least once a week. My boys love tacos, burritos and guacamole. So to celebrate Cinco de Mayo this year I knew we need to do something a little special so I did some research on beef carnitas and decided to put my slow cooker to work. Slow…
