We eat lunch at home every day and sometimes PB&J or Turkey Sandwiches get a little old so I’m always trying new recipes that are quick and easy. I love grilled cheese but it always seems a little less than impressive so I tried to jazz it up and hence created the ABCT sandwich.
What is an ABCT sandwich? Only the most awesome sandwich to ever grace the planet.
A – Avocado
B – Bacon
C – Cheddar Cheese
T – Tomato =
YUM!~
This is a great recipe to make with left over bacon, but let’s be honest when is there ever left over bacon? So go ahead and buy some extra bacon just so you can enjoy this yumminess.
Ingredients:
1 Avocado sliced
Cooked Bacon – 2 or 3 slices per sandwich
1 Slice of White Cheddar Cheese (or more if you like)
1 Tomato Sliced
2 Pieces of your favorite bread (mine is sourdough!)
Butter
Directions:
Cook the Bacon if you don’t have left over bacon. I cook mine in a pan until it is nice and crispy.
Butter each slice of bread
Layer ingredients – cheese, bacon, tomato and avocado, more cheese
Cook in toaster oven (on toast) until bread is browned and cheese if fully melted

I love fish but have a hard time figuring out how to cook it. I just recently discovered cooking “en papillote” (in paper) and this is a great way to easily cook fish. I did a bit of research and found a few recipes I decided to use to create the recipe below. The fish…
Summer means two things in the Lieb house peaches and ice cream. And the combination of the two equals the ultimate summer treat, peach ice cream. Joe and I received an ice cream maker as a wedding gift from Joe’s parents along with his mother’s ice cream recipe. It’s more of a custard recipe but…

My family loves pumpkin muffins and we used to make these cake mix pumpkin muffins but this recipe uses almond flour which makes them gluten-free and paleo-friendly. They are melt-in-your-mouth moist and have a touch of sweetness. These muffins are perfect for breakfast or a snack as they aren’t overly sweet. Ingredients and Substituions ALMOND…
One day, I hope to have a fig tree growing right in my own backyard. Until then, I’ll happily take figs any way I can get them. Fresh figs are a treat when you can find them, but they’re often expensive and fleeting. Dried figs, on the other hand, are available year-round and deliver an…
