We eat lunch at home every day and sometimes PB&J or Turkey Sandwiches get a little old so I’m always trying new recipes that are quick and easy. I love grilled cheese but it always seems a little less than impressive so I tried to jazz it up and hence created the ABCT sandwich.
What is an ABCT sandwich? Only the most awesome sandwich to ever grace the planet.
A – Avocado
B – Bacon
C – Cheddar Cheese
T – Tomato =
YUM!~
This is a great recipe to make with left over bacon, but let’s be honest when is there ever left over bacon? So go ahead and buy some extra bacon just so you can enjoy this yumminess.
Ingredients:
1 Avocado sliced
Cooked Bacon – 2 or 3 slices per sandwich
1 Slice of White Cheddar Cheese (or more if you like)
1 Tomato Sliced
2 Pieces of your favorite bread (mine is sourdough!)
Butter
Directions:
Cook the Bacon if you don’t have left over bacon. I cook mine in a pan until it is nice and crispy.
Butter each slice of bread
Layer ingredients – cheese, bacon, tomato and avocado, more cheese
Cook in toaster oven (on toast) until bread is browned and cheese if fully melted

Halloween is coming and I’m craving candy. While the boys have been home from school this week we’ve been spending a lot of time together in the kitchen. Most recently we made Reese’s Pieces Rice Krispies Treats. Reese’s Pieces always remind me of the 80’s and E.T. and I absolutely love them. Somehow my kids…
I love a good salad but for whatever reason I have trouble assembling a decent salad on my own. I always draw a blank on what to put in my salad. You see I grew up eating Iceberg Lettuce salads with carrots, cucumber and radishes… I hate radishes. So in my mind salads are pretty…
On a whim I bought some ground lamb that was on sale. I’ve never cooked lamb and had no idea what I was going to do with it but I’m up for trying new things. Additionally our produce box this week had 2 eggplants so as I searched Pinterest for ground lamb recipes and I…
Risotto sounds intimidating but it’s actually pretty easy to make, and totally delicious. The first time Joe attempted to make risotto he had the heat too low and it took about 4 hours to make, it tasted great but no one wants to stir rice for 4 hours. Finally he perfected his technique and it…
I often find great deals on Natural London Broils at Harris Teeter. (Once I got a $15 steak for $3!) I never really knew how to cook London Broil but for $3 I’m willing to learn. Now I have a whole arsenal of steak recipes I can pull out at the drop of a hat….
