We eat lunch at home every day and sometimes PB&J or Turkey Sandwiches get a little old so I’m always trying new recipes that are quick and easy. I love grilled cheese but it always seems a little less than impressive so I tried to jazz it up and hence created the ABCT sandwich.
What is an ABCT sandwich? Only the most awesome sandwich to ever grace the planet.
A – Avocado
B – Bacon
C – Cheddar Cheese
T – Tomato =
YUM!~
This is a great recipe to make with left over bacon, but let’s be honest when is there ever left over bacon? So go ahead and buy some extra bacon just so you can enjoy this yumminess.
Ingredients:
1 Avocado sliced
Cooked Bacon – 2 or 3 slices per sandwich
1 Slice of White Cheddar Cheese (or more if you like)
1 Tomato Sliced
2 Pieces of your favorite bread (mine is sourdough!)
Butter
Directions:
Cook the Bacon if you don’t have left over bacon. I cook mine in a pan until it is nice and crispy.
Butter each slice of bread
Layer ingredients – cheese, bacon, tomato and avocado, more cheese
Cook in toaster oven (on toast) until bread is browned and cheese if fully melted

I first had okra gumbo when Joe and I were dating. He had several batches of his grandma’s okra gumbo stored in his freezer and decided I needed to give it a try. This gumbo was full of fresh vegetables picked from his grandma’s garden and of course lots of grandma love. I was a…
I love a quick and easy lunch. It’s easy to get into a rut of eating the same, easy-to-make lunches, especially when you are busy. I’ve found a way to insure I eat a healthy lunch to have a plan. Recently I planned out a series of dinners that could easily convert all or part…
This is a great Greek Salad that is great as a side dish or eaten on it’s own as a light lunch or snack. It can also be easily prepared ahead of time and stored in a mason jar for a quick on-the-go meal. To store it in a mason jar add the dressing to…
I received a cookie press as a wedding gift, but for years, I had no idea how to use it. I’d only ever made cheese straws! Then one day I discovered spritz cookies, and they were so cute and delicious that I knew I had to learn how to make them. After trying a few…
I love roasted vegetables. I love the rainbow of colors, the different textures, the cripsy outside and tender insides that come from roasting vegetables. I think most hearty vegetables taste their best when they are roasted. Lately, I’ve been eating roasted veggie bowls for lunch on the regular. This is a great make ahead meal…
This weekend was a bit off. I’d planned on going grocery shopping on Saturday but with tornado warnings and bad storms I decided to stay home. So our meal planning got thrown off a bit and the pantry was pretty slim pickings. Thankfully Joe stepped up and made dinner for everyone since I was feeling…
