Rustic Tortellini Soup
This is a recipe that kind of stumbled upon years ago. I adjusted it for the ingredients I had and then tweaked it over the years until until it’s become one of our favorite soup recipes. We are a pasta loving family but sometimes we need something different than cooked pasta with a sauce so this soup hits the spot. It’s filling and our 4 boys love the cheesy tortellini.
If you want to switch it up you can get tortellini filled with other things like spinach or sun dried tomatoes.
Ingredients
- 1 tablespoon olive oil
- 1 medium chopped onion
- 3-4 cloves of minced garlic
- 2 boxes (16 oz each) reduced-sodium chicken broth
- 1 1/2 cup of water
- 1 can (14 1/2 oz) diced tomatoes
- 2 packages (9 oz) cheese tortellini (refrigerated or frozen)
- 2 cups frozen chopped spinach
- 1 tablespoon Italian seasoning
- 1/4 teaspoon black pepper
- Shredded Parmesan (optional)
Directions
- In a large pot saute chopped onion in oil until translucent then add garlic and saute for 2 minutes.
- Then add the chicken broth, water, and tomatoes and bring to a boil.
- Add tortellini and return to a boil. Cook for 5-8 minutes, stirring occasionally.
- Reduce heat and add spinach, seasoning and pepper. Cook another 3 minutes.
- Serve topped with cheese.
