Rustic Tortellini Soup

This is a recipe that kind of stumbled upon years ago. I adjusted it for the ingredients I had and then tweaked it over the years until until it’s become one of our favorite soup recipes. We are a pasta loving family but sometimes we need something different than cooked pasta with a sauce so this soup hits the spot. It’s filling and our 4 boys love the cheesy tortellini.

If you want to switch it up you can get tortellini filled with other things like spinach or sun dried tomatoes.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium chopped onion
  • 3-4 cloves of minced garlic
  • 2 boxes (16 oz each) reduced-sodium chicken broth
  • 1 1/2 cup of water
  • 1 can (14 1/2 oz) diced tomatoes
  • 2 packages (9 oz) cheese tortellini (refrigerated or frozen)
  • 2 cups frozen chopped spinach
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon black pepper
  • Shredded Parmesan (optional)

Directions

  1. In a large pot saute chopped onion in oil until translucent then add garlic and saute for 2 minutes.
  2. Then add the chicken broth, water, and tomatoes and bring to a boil.
  3. Add tortellini and return to a boil. Cook for 5-8 minutes, stirring occasionally.
  4. Reduce heat and add spinach, seasoning and pepper. Cook another 3 minutes.
  5. Serve topped with cheese.
