Peach Caprese Salad

Give me all the fresh fruits and vegetables in summer. I’m a huge fan of a caprese salad or sandwich but then I discovered the peach caprese salad! I know what you’re thinking, “Peach?” YES PEACH!

I’ve tried this salad with yellow and white peaches, I like both but for this recipe I used white peaches. I also used the pre-sliced fresh mozzarella from Trader Joe’s, fresh basil from my garden and balsamic vinegar. Some people suggest white balsamic but I didn’t have any so I used what I had it and it turned out awesome!

Ingredients

  • 1 ripe peach, sliced 1/2 in thick
  • 1 mozzarella ball, sliced 1/2 in thick
  • 6 leaves of basil, finely sliced
  • balsamic vinegar
  • olive oil

Instructions

  1. Layer mozzarella cheese slices with
    peaches. Top with sliced basil. Drizzle with extra virgin olive oil and
    balsamic vinegar, then serve
