Whole30 – Day 4

I’ve been feeling pretty good so I think the Paleo diet is doing it’s thing. I don’t really miss most of the carbs, the main thing I miss is sugar, especially in the evening.

I’ve really been ramping up my breakfasts which has helped me start the day with more energy and keeps me from getting hungry 30 minutes later.

Breakfast: Scrambled Eggs with Barbacoa and Sweet Potato-Bacon Hash. I had originally planned for a veggie omelet but I had some left over barbacoa & sweet potato hash so I decide mix it all together in scrambled eggs. It was amazing! Probably one of my favorite and most filling breakfasts.

Lunch: Leftover Chicken Fajitas, Carrots and Guacamole

I finally got to enjoy the fajitas I made from the night I stabbed myself with a knife and they were pretty good. I used to detest bell peppers but I’m really loving them lately.

I made way too much guacamole at lunch time so we had it as a side for dinner. My boys love guacamole (a.k.a. rock-n-rolly) I think we could eat it everyday.

I didn’t really have too many snacks during the day but in the evening I had an apple with almond butter and a cup of hot green tea.

We are doing very well sticking to the meal plan, I’ve only substituted a few planned meals for leftovers because I don’t like to waste food.
