Breakfast: 2 Hard Boiled Eggs & Strawberries

I hard boiled a few extra eggs to keep in the fridge for a snack or to add to a meal.

Lunch: Leftover Pork Loin, zucchini and cauliflower and roasted kabocha squash

I’ve read that roasted kabocha squash was good so I decided to give it a try and it is in fact pretty awesome. It has a smooth and buttery flavor somewhat similar to sweet potatoes. I will most certainly be making it again. Jude tried the kabocha and liked it but didn’t eat any more of it. Noah loved it and wanted to keep eating it.

Dinner: Stuffed Peppers

I combined together aspects of a few different stuffed pepper recipes to make this dish. The stuffing is comprised of onion, bell pepper, carrots, mushroom, ground beef, and Italian seasoning. I think I will change a few things next time I make this dish like mixing the tomato sauce in with the stuffing. Also, the peppers were a bit watery, not sure how to fix that one just yet.

Snacks: I’m doing a little better not wanting to snack so much. I had a few almonds and apple slices in the afternoon and after dinner Joe and I had a fun sweet treat of frozen banana and almond butter.
