Grilled Balsamic Chicken and Peach Salad

I love a quick and easy lunch. It’s easy to get into a rut of eating the same, easy-to-make lunches, especially when you are busy. I’ve found a way to insure I eat a healthy lunch to have a plan. Recently I planned out a series of dinners that could easily convert all or part of its leftovers into an epic salad the next day. I will be sharing that post soon but through that week I learned that making it easy is the key to success. Maybe it’s not that you don’t like salad, it’s that you don’t like bad salads. A good salad with a lot of high-quality and delicious ingredients can make or break a salad.

This salad is super easy because I use some pre-made and easy-to-prepare items for a quick, throw-it-together salad. The key to this salad is Trader Joe’s Balsamic Grilled Chicken Breasts. Prepared meats make adding protein to any salad a breeze. If you don’t have access to a Trader Joe’s I know a lot of grocery stores sell pre-grilled chicken in the refrigerator section, this is a great alternative.

Ingredients and Substitutions

CHICKEN BREAST – Pre-cooked boneless, skinless chicken breasts are used in this recipe but you can easily substitute them for boneless chicken thighs.

FRESH PEACHES – Fresh Peaches are best, I wouldn’t substitute canned peaches. You could use other fresh stone fruit like apricots or nectarines.

GOAT CHEESE – The tang of goat cheese pairs nicely with the peaches, however fresh mozzarella is also a nice complimentary cheese to peaches. Feta cheese would also be a nice alternative cheese to add to the salad.

BALSAMIC VINAIGRETTE – You can you whichever salad dressing you like however, a balsamic vinaigrette or white balsamic adds a nice acidity to the salad.

ADDITIONAL INGREDIENTS – You could add red onion, blueberries, corn, or avocado.

Ingredients

  • 1 sliced chicken breast Trader Joe’s Balsamic Grilled Chicken Breast
  • 4 cups salad greens or more
  • 1/2 cup sliced cucumber
  • 1 sliced peach
  • a few cherry or grape tomatoes
  • 1/4 cup chopped pecans
  • 2 tbs balsamic vinaigrette
  • 2 tbs cup goat cheese optional

Instructions

  1. Since you’re already using pre-grilled chicken all you need to do is assemble your salad, top with dressing and enjoy
