Our family eats tacos at least once a week. Jude absolutely loves tacos. It surprises me how many tacos he can consume. One thing I like about making tacos for my family is I can always sneak in a few healthy vegetables and no one is the wiser.
We recently received Ortega Whole Grain Taco Shells, 40% Less Sodium Taco Seasoning and Taco Sauce. I made a delicious Taco Casserole recipe and the boys loved it! It was super simple to make but full of flavor. I should have taken an after picture but we were too busy devouring our dinner.
COOK beef, onion and garlic until beef is browned; drain. Stir in water, taco sauce, chiles, 1/4 cup olives and seasoning mix. Cook over low heat for 3 to 4 minutes.
LAYERhalf of broken taco shells on bottom of greased 12 x 8-inch baking dish. Cover with half of meat sauce; sprinkle with 1 cup cheese. Repeat with remaining shells, meat sauce and cheese. Bake for 20 to 25 minutes or until bubbly and cheese is melted. Top with remaining olives, tomatoes and green onions.
Tacos are a family-friendly way to enjoy a meal together, and can be healthy when prepared with the right ingredients. The whole family can participate in this do-it-yourself dinner featuring a variety of nutritious and colorful toppings such as chopped tomatoes and peppers, low fat cheeses, crunchy and soft taco shells, seasonings and more.

We love music and we love to dance. We’ve been listening to the Alvin and The Chipmunks Squeakquel Soundtrack a lot lately. Jude loves to learn new dance moves and is gradually learning the words to some of the songs. It’s fun to watch his verbal and motor skills develop while we’re having a fun…
