Make-at-Home Star Crunch Brownies

When I was a kid one of my favorite after school snacks were Little Debbie Star Crunch. If you aren’t familiar with Star Crunch cookies you really need to try them ASAP, they are caramel and crispy rice coated with fudge. YUM!

I don’t eat Little Debbie snacks every day after school but I love the novelty of a chocolatey crunch. I thought I should dress up a simple store bought brownie mix with my favorite childhood treat. Now, this recipe isn’t an exact dupe of Little Debbie Star Crunch cookies but it does hit all of the same notes. What I really love about these brownies is they are super easy to make and don’t require a lot of ingredients or skill.

I will say they are very rich brownies, delicious but rich. My kids loved these and I am sure we will be making them again very soon.

Ingredients

Directions

  1. Bake brownies according to package directions (You can also make homemade brownies using this recipe but I used boxed brownies because I can.)
  2. Allow brownies to fully cool after baking
  3. Carefully spread marshmallow fluff across the top of the brownies until fully covered.
  4. In a microwave safe bowl add chocolate chips and microwave in 30 second, stir and repeat until chocolate is fully melted.
  5. Add peanut butter to melted chocolate, stir until fully melted and combined.
  6. In a large bowl add Rice Krispies cereal
  7. Pour chocolate and peanut butter mixture into the large bowl with the Rice Krispies and stir until fully combined.
  8. Carefully pour chocolate Rice Krispies on top of the marshmallow layer on the brownies.
  9. Spread until evenly coating the brownies
  10. Cover and refrigerate for 2 hours, until chocolate has fully hardened.
  11. Cut into squares and enjoy

Store brownies, covered in the fridge to keep them firm.
