The Best BLT Salad

I love a good salad. I also love a BLT Sandwich but I’m trying to eat more consciously which means less bread for me. I love bread, it’s a comfort food for me. But bread does not like me, well it does like me… A LOT… and it wants to stick around. So in an effort to eat better I’m upping my salad game and enjoying all the vegetables I can possibly eat in one single day.

I recently discovered Trader Joe’s cooked uncured bacon and it’s a life changer. I like the idea of adding bacon to dishes but I usually don’t want to cook 1 slice of bacon just for my salad or sandwich. Sometimes I think, I’ll just save some of my breakfast bacon to use later…. HA HA HA HA. Who saves breakfast bacons? Is that even possible? So thank you Jesus for packaged pre-cooked bacon.

The rest of the ingredients came from my produce box delivery, with exception to the cheese. This salad has bibb lettuce, tomato, cucumber, carrots, bacon and feta cheese. I like honey mustard dressing but you can use any dressing you like. It’s delicious and filling, perfect for lunch or dinner.

BLT Salad

Ingredients

  • 1 head Bibb Lettuce cut into bite size pieces
  • 1 cup chopped carrots
  • 1 cup sliced cucumber
  • 1 large tomato diced
  • 4 strips cooked uncured bacon

Instructions

  1. Add all ingredients to a large bowl and toss together.

  2. Top with favorite salad dressing
