Paleo Slow Cooker Chicken with Onions and Mushrooms

I found a great deal on some Split Chicken Breasts the other day so I bought them not knowing how I was going to use them. With most bone-in meats I prefer to use the slow cooker so I started my online research for slow cooker split chicken breasts to see how long I needed to cook them. Then I checked out the fridge to see what we had available and voila this recipe was born.

Slow Cooker Split Chicken Breast with Mushrooms

Ingredients and Substitutions

SPLIT CHICKEN BREASTS – Split chicken breasts are simply chicken breasts left on the bone. They are often available at your grocery store for cheaper than boneless chicken breasts. Because they have bone split chicken breasts will take longer to cook than boneless chicken breasts. This makes them ideal for cooking in the slow cooker. If you can’t find split chicken breast you can use bone-in chicken thighs.

MUSHROOMS & ONIONS – Buy presliced or slice your mushrooms. White button or baby portabella would work with this recipe. Thinly sliced yellow or sweet onions are best for this recipe.

CHICKEN BROTH – Store-bought or homemade chicken broth will keep the chicken moist while it cooks over a long period.

Slow Cooker Split Chicken Breast with Onions and Mushrooms

Ingredients

  • 1 tsp Olive Oil
  • 1 Yellow Onion sliced
  • 8 ounces Mushrooms sliced
  • 2 Large Bone-in Split Chicken Breasts skin removed
  • 1 cup Chicken Broth
  • 1 tsp Thyme
  • Salt and Pepper

Instructions

  1. Heat oil in a large skillet, Season chicken with salt, pepper, and thyme.

  2. Brown chicken in skillet, about 2-3 minutes on each side. Remove from skillet.

  3. Add onion to the pan and cook for 2-3 minutes, until soft.

  4. Place onions in the bottom of the slow cooker., add mushrooms and chicken.

  5. Add broth and cook on low for 6-8 hours, depending on the size of your chicken breasts.

  6. When the slow cooker is finished, remove the chicken and top with mushroom and onion sauce.

    re: Directions:
    Line bottom of slow cooker with onions.
    Place Chicken breasts on top of the onions
    Top Chicken Breasts with onions
    Pour the Chicken Broth around the edge of the slow cooker
    Add Thyme, Salt and Pepper
    Cook on low for 6-8 hours

    WHERE DO THE MUSHROOMS GOOOO???
